Green power bowl with quinoa & avocado

Ingredients (2 people)

• 100 g quinoa

• 1 small broccoli (in florets)

• 1 large carrot

• 1 avocado

• 2 handfuls arugula

• 150 g edamame (shelled, fresh or frozen)

For the dressing:

• 2 tbsp extra virgin olive oil
• 1 tbsp lemon juice
• 1 tsp tahini (optional for creaminess)

• Salt & pepper

Preparation method
  1. Cook the quinoa according to the package instructions and let it cool slightly.

  2. Briefly cook or steam the carrot and broccoli until al dente.

  3. Slice the avocado and grate or cut the carrot.

  4. Divide the arugula among the bowls and add the quinoa.

  5. Arrange the broccoli, carrot, edamame, and avocado nicely on top.

  6. Mix the dressing and spread it over the top.
